Safety

This site is about live fire and about food held for long periods at low temperature. Both can hurt you if handled badly.

Everything published here describes what happened on my equipment, in my conditions. Your smoker is not my smoker: steel thickness, seal condition, altitude, wind and fuel all change the result. Treat the numbers on this site as a reference point, not as settings to copy blind.

Follow the food safety guidance of your national authority for internal temperatures and holding times. In the United States that is the Food Safety and Inspection Service of the USDA. Nothing on this site overrides it.

Nothing here is professional advice on food safety, fire safety or equipment installation. Read the manufacturer instructions that came with your equipment and follow them.

Accuracy

Measurements are published as recorded. Instruments drift, logs get misread, and I make mistakes. If you find one, write to and the article will be corrected with a dated note explaining what changed.

Specifications quoted from manufacturers were accurate when the article was written. Manufacturers revise products without renaming them, so check the current specification before buying.
